Corn tortillas and guar gum

I am a reasonable person, but when I made this discovery, I wanted to find a roof top and shout a very big long string of expletives at the top of my lungs! I am discovering that a majority of my migraines are food sensitivity related. Not unusual, and something I can work with. So as many of you can relate to I eliminated a lot of food, understatement.

I eliminated bread and due to finding myself sensitive to the alternative ingredients in gluten-free food, I also eliminated a lot of gluten-free bread and gluten-free foods. Fine.

I switched to corn tortillas. The only ingredients are corn and sea salt. Great. Migraine-free for weeks. Okay, days but still it's good.

Then I speak to my osteopath who I love, And he reminds me about non-GMO food And organic choices.
So, I go to an expensive organic market, You all know where I'm going with this, And feeling victorious I buy three packages of organic corn tortillas without genetic modification!

Two days later, 2 migraines later exhausted by the migraine medication, I have my Aha moment. I check these PERFECT little tortillas and sure enough, GUAR GUM.

OMG.

Do you ever feel like you just can't win the migraine game!?

So, I tossed these pearly pieces of you know what in the garbage. I'm going back to my crappy corn tortillas with two ingredients, corn and salt.

There's a lesson in this and I hope someone benefits from it.

I'm using humor to get through this, it is after all so absurd it's funny. TELL THAT TO MY MIGRAINE.

  1. Excuse my ignorance, but isn't guar gum a gluten-free binder option, similar to xantham gum? I have seen where it has caused upset stomach and other stomach issues in some people, but I have not heard of it causing more migraines. Like I said, please excuse my ignorance, I'm new to GF living (this month is only my 2nd month GF, though I've been dealing with migraines for most of my life).

    1. Yes, gums are used to improve the texture of gluten-free foods. Unfortunately, they also contain MSG, so they are a problem for many people with migraine.
